1 whole roasting chicken (5 to 7 lbs.)
1/4 cup of butter
2 1/2 cups of apple cider
6 to 8 small unpeeled red potatoes, quartered
1 to 2 jalapenos cut into strips
6 to 8 bacon strips
2 to 4 small tomatoes, quartered
Place the whole chicken breast side up on a rack in a roasting pan and dot with the 1/4 cup of butter. Bake uncovered at 375 degrees for 15 minutes. Reduce heat to 325 degrees and bake for 2 hrs.
After 2 hrs. pour the 2 1/2 cups of apple cider over the whole chicken, add potatoes, onions and jalapenoes to the pan. Place the 6 to 8 slices of bacon on top of the whole chicken (top on the breast). Bake 1 hr. longer basting often.
Add tomatoes to the pan and bake 30 minutes longer or until a meat thermometer reads 180 degrees. Cover and let stand 10 minutes before carving. Thicken the pan juices for gravy if desired.
Serve KW’s BBQ Sauce on the side as a dipping sauce!
