BBQ Chicken Stuffed Baked Sweet Potatoes Recipe

Here is a unique recipe that caught my attention because of it's unusual combination of chicken and baked potato.  The homestyle use of pulled chicken has a back-home kind of warmth that looks like you will have to make extra in order to have leftovers.  BBQ sauce has many uses and chefs love to use it in many different original dishes – it even makes a good substitue for ketchup- but when you mix it with chicken and a baked potato it looks like shangrila has been brought home to the kitchen table.

Ingredients
 
    1 medium sweet potato, halved
    Olive or coconut oil
    1 chicken breast, cooked and shredded
    Green onions, for serving
    Chopped red onions, for serving
    For the barbecue sauce
    1 Tbsp olive oil
    1 clove minced garlic
    15 oz can tomato sauce
    1/2 cup unsweetened apple sauce (the individual cups are perfectly portioned)
    1/4 cup cider vinegar
    1/4 cup coconut aminos
    1 Tbsp creole mustard
    1 tsp Tobasco
    2 tsp chili powder (I used half ancho, half regular)
    1 tsp paprika

Home cooked meals will always be a hit even when not at home.  When on the road it is always fun to find a restaurant that features home cooking instead of the usual deep fried menu.
